In principle, I think the concept with the Yatai booths is mega cool. You don't get any of it during the day, they appear everywhere in the evening. We wanted to try Yaki Ramen, but unfortunately we came to a less good position for it.

This is in my opinion the main reason why we should visit Fukuoka.
They are all located within the Tenjin and Nakasu area of Fukuoka city. The most populated area is by the canal in the Nakasu area.
The city has provided the necessary infrastructure. Power and water hookups and lots of public washrooms so that hygiene and sanitary considerations are met.
What we noticed, if the cart is a little bit away from the core in Nakasu, the price is cheaper. Most places do have English, Chinese, or Korean menus available. Only a few accept credit cards - most are cash only.
We ended up spending about ¥4000 per place per time for two people. A quick couple of drinks and a couple of items on the menu. It can add up very quickly if you are not careful.
A few highlights for us:
Motsu yaki - this is pan-fried beef intestines.
Fried instant ramen - self-explanatory
Blackened chicken - right in front of you on the hibachi
Endless lemon whisky sours and cold beers taste especially good on a hot summer's evening.
It is noisy. It is smokey. It is expensive. It is delicious. It is fun.

Yatai is the way to eat in Fukuoka. Small food stalls with room for 6-8 people, sitting on stools at a counter sheltered from the cold by awnings. Each yatai has its specialty - it could be noodle soup, yakitori skewers, sake, or something completely different.
Forget the regular restaurants and seek out a (or several) yatai. That's what the locals do.
This said by someone who failed to do so, but regretted it bitterly after visiting an expensive and boring BBQ restaurant. The visit cost almost 10,000 yen, and I didn't even get full.
On the way back to the hotel, I stumbled upon several yatai, from which heavenly smells emanated, and where people sat and enjoyed themselves at the counter while the owner cooked the food fresh for them.

It great for experience... but for Malaysia, eating at road side stall... is kind of like daily business.. so its not much for me to experience as Malaysian, but as a traveller in Japan.. that something ought to try .. since road side stall is really kind of rare in Japan ... and who knows how much longer they can operate..
Btw , yatai is just a general term for road side hawker...so 1st, try it during the cool season of else , in the summer or hot dampy weather.. I think is not going to be a very pleasurable experience....
we visited in the cooler days so for me is still ok.... 2nd thing is there is quite a handful.. maybe 50-100 but i only saw few that is crowded with people so obvoiusly i choose one that is line up with people while they are starting to unbox their stall..
I google around, the most popular one will gonna let you wait at least 60-90 minute before getting a seat ... so i try other stall which seem quite popular among the local instead the tourist... the wait is not too bad just little under 60 minute
how ever, do not let the word road side hawker fool you.. the charges is not way lower that the real store offer, i would say on par or maybe some off... but dont expect good deals especialy those hawker with fancy tiktok and insta... expect to pay as you would eat in a normal stall..
the one we eat in definitely taste good. we have our good experience, if we try again.. i guess if definitely will be another yatai ...

Fukuoka's iconic yatai stalls are a must try, if you are in the area during the evening time. I was a bit hesitant first because I heard that they don't have English-translated menus and my Japanese wasn't very good. But that wasn't a problem anymore when my Japanese friend wanted to go there with me. From soups, ramen, skewers, intestines, oden to tempura and BBQ there was something for everyone. If you aren't a very picky eater and don't mind squeezing yourself with locals on a bench and having little space for yourself, then this is certainly something you should try out.

The place was easy to reach via public transportation, and right next to a beautiful river. Other than that, to us, it was overrated and expensive. JPY800 for a small box of 6 takoyaki; JPY1,200 for a small dish of grilled beefs with 6 small pieces. The taste was so so, not as tasty as expected.

Fukuoka's open air food stands (屋台, Yatai) are possibly the city's best known symbol. Yatai can generally seat about seven or eight people and provide an atmospheric outdoor environment to enjoy various foods that are generally simple and filling. There are dozens of yatai scattered across Fukuoka including Tenjin, but the best place to find them is on the southern end of Nakasu Island. Located in the middle of the city, Nakasu Island has a long row of around 20 yatai that are attractively situated along the river. Yatai are typically open from around 6pm to around 2am, except when the weather is very bad.
The yatai in Nakasu and the Nakasu district are perfectly safe to walk the streets and observe the nightlife of the area.
Typical dishes enjoyed at yatai are grilled chicken skewers (yakitori), hot pot (oden) and most famously Hakata Ramen, a local noodle dish featuring relatively thin ramen noodles in a pork bone based soup (tonkotsu). Various alcoholic drinks are also available, and help make the yatai a great place to get in touch with the locals, although many of the "locals" happen to be Japanese tourists visiting Fukuoka from other parts of Japan.
I love the concept and cultural significance of these yatai and I hope they live on forever, although, they seem to have become a bit over crowded with tourists and bit overpriced. Although, if there is an opening in one of the stalls and something catches your eye, then why not try at least once to experience and support the locals.
I never actually ended up eating at one of the yatai since there are so many good restaurants in the Hakata and Tenjin area. However, I really enjoyed just walking along the river at night and people watching. There are many local couples just sitting along the river having beers enjoying the views.

福岡と言えば「屋台」というイメージがありますが、何度か訪れた福岡では普通の店舗でしか食事をしたことがありませんでした。ついに、今回、初屋台を体験しました。
事前に調べて、評判の屋台を見つけて、そこに向かいました。お目当ての屋台に向かっている途中にも、いくつかの屋台の横を通り過ぎました。私たちがお目当ての屋台に向かって天神の町を歩いていたのは午後6時半ごろ。屋台が開店し始める時間帯のようです。事前に調べてみると、評判の屋台というのがいくつかありましたが、人気店はどこも混んでいるんです。開店直後だというのに、行列ができているんですね。
私たちもおめあての屋台でしばらく並びましたが、念願の初屋台を楽しみました。

Seul repas dégueulasse en deux voyages de trois semaines au Japon, le yatai où on a mangé au niveau de Tenjin était en plus cher. La meilleure brochette était moins bonne que ce qu'on trouve en surgelé dans n'importe quel supermarché en France. Incompréhensible dans un pays aussi réputé pour sa nourriture et son absence d'arnaques.

今回の福岡では、屋台に行ってみたいという妻の希望を叶えるために、天神の町を散策した後、屋台に行きました。
私たちが行ったのは、天神の大丸の前あたりから南に向かう大通り沿いです。このあたりは屋台の密集度はあまり高くないんですが、評判のよい屋台が点在している場所でもあります。
屋台ですから、居心地が良い空間とか、とびきりおいしい食事が味わえるとかではありません。「福岡の屋台」そのものの雰囲気を味わいました。
