My wife and 2 kids (21, 13) had an amazing time learning how to cook various Moroccan dishes with Chef Tarik. They have a beautiful covered outdoor setting and we were greeted by Chef Tarik and everyone was given food to cut, slice, dice, etc. The Chef was friendly and informative and did a great job making us feel welcome. Most of all, the organic food we ate was amazing.

The instructors were so passionate about teaching their cooking methods and recipes. Their philosophies about improving local gardening practices and being ambassadors for empowering local women was impactful. We had such a fun experience the entire time!! Thank you, Fatima and Siham: We will treasure the time we spent with you for a lifetime!!

Very friendly and comprehensive cooking classes.
We made 3 tagines and a couscous, and then enjoyed ourselves.

My husband and I (as part of our small group tour with Intrepid) thoroughly enjoyed every moment of our visit today. The way the place is set up is fantastic and it is beautifully and tastefully furnished and decorated, creating a restful and peaceful environment.
Besides the environment, it is the genuine warmth, hospitality, love of and respect for all things Moroccan and a passion for cooking that shines through. The meal that we made was delicious and we had a lot of fun while learning more about Moroccan cuisine and culture.
Thank you for an unforgettable experience!

Great location about 20km outside of Marrakesh.
Charming staff
Delicious food - we prepared 3 salads and 4 main courses - and ate them afterwards.
Plus a tea ceremony and lots of background information on Moroccan cuisine.

Have been to these types of things before and did not do as much hands on. This had the perfect balance of teaching and explanation and also discussion of their mission. Bravo. We made great dishes. Lots of cultural context and then we ate. Lots of friendly faces and the chef that taught us was amazing!!!!

We had an amazing morning with chef yusuf, he made it so much fun. We loved the mint tea and cooking our own lunch. The setting was beautiful and I can’t wait to repeat the recipes at home!

Chef Yousef was excellent throughout. He was very knowledgeable, funny and clearly skilled. We had the best mint tea and tagine of our entire stay in Morocco and learnt a hell of a lot along the way. The only warning I have is that there is a lot of food so don't have a late breakfast as we did! Though chef Tarik was with another class he kindly came to welcome us as we arrived from the transfer car.
I would recommend this class to anyone with an interest on Moroccan cuisine. It is also a very good cause with a training programme for women from local villages.

Excellent course. Great location out of the city with included transfers. The food was excellent as was the teaching. I would 100% recommend.

Hello, when I took the course with Chef Youssef on Jan. 3rd, we were told he would send recipes to us afterwards. I have sent two emails requesting them, but haven't received a reply. Is it possible to send me the recipes, or at least the spice combinations we used in our tagines and salads? I am anxious to make some of these at home. Here are the dishes I remember:

Vegetable Couscous
Fava Bean Tagine
Green Pepper & Tomato Salad

Sweet( cinnamon, ginger, turmeric, salt & black pepper ) : it goes with lamb tagine & caramelized prunes
Lemon( ginger, turmeric, salt & black pepper ) : it goes with chicken tagine & preserved lemon, green olives
Normal( sweet paprika, ginger, turmeric, salt & black pepper ) : it goes with vegetables tagine & couscous with vegetables
Normal+Cumin( cumin, sweet paprika, ginger, turmeric, salt & black pepper ) : it goes with fish tagine & some Moroccan salads sush
as eggplant, carrot ...............

Lamb Tajine with Caramelized Prunes (Sweet Marinade)
3cups chopped sweet onions
• 3 pounds boneless lamb stew meat, cut into 3/4- to 1-inch pieces
• 2 cups water
• 2 cinnamon sticks
• 1 teaspoon ground cinnamon
• 1 teaspoon salt
• 1 teaspoon coarsely ground black pepper
• 1 teaspoon ground ginger
• 1/8 teaspoon crumbled saffron threads
• 250g drie prunes
• 4 tablespoons chopped fresh Italian parsley, divided
• 1/4 cup olive oil
• Sesame seed
Recepies Of Zaalouk (Moroccan Smocked eggplant salad (Normal + Cumin Marinade))
large eggplants
1 tablespoon extra-virgin olive oil
2 cloves garlic, minced
1 large tomato, chopped
1 teaspoon cumin powder
1 teaspoon paprika
1/4 cup fresh chopped coriander
1/4 cup fresh chopped parsley
Salt, to taste
1/2 teaspoon vinegar
1/2 teaspoon harissa (optional)
1/2 teaspoon tomato past
Recepies of Chicken tajine with green olives and pickeld lemon(Lemon Marinade)
INGREDIENTS
• 1 teaspoon ground ginger
• 1 teaspoon turmeric
• 1/4 teaspoon freshly ground pepper
• 2 Tbsp olive oil
• 1 chicken, 3-4 lbs, cut into 8 pieces (or 3-4 lbs of just chicken thighs and legs, the dark meat is more flavorful)
• Salt
• 3 cloves garlic, minced
• 1 onion, chopped
• The rind from 1 pickled lemon, rinsed in cold water, pulp discarded, rind cut into thin strips (if you don't have preserved lemon, use whole thin slices of regular lemon)
• 1 cup green olives, pitted
• 1/2 cup water
• 1/4 cup chopped fresh cilantro
• 1/4 cup chopped fresh flat-leaf parsley
or bouquet garnit
• Recepies of Moroccan Fresh Tomato and Roasted Pepper
Salad - Salade Mechouia
Ingredients:
4 ripe tomatoes, peeled, seeded and chopped
• 2 roasted green peppers, peeled and chopped
• 1 teaspoon finely chopped garlic
• 1 tablespoon finely chopped parsley
• 1/8 teaspoon pepper
• 1/4 teaspoon salt
• 1/4 teaspoon cumin
• 2 to 3 teaspoons vinegar or limon juice
• 1 tablespoon olive oi

Recepies Of Vegetables Tajine Berber Style
4 tbsp. olive oil
2 medium onions, peeled and quartered
2 tsp. sweet paprika
Pinch saffron threads
Salt and freshly ground black pepper
2 medium potatoes, peeled and quartered
1 large carrot, peeled, halved crosswise, and quartered
1 large zucchini, halved crosswise and quartered
2 small white turnips, peeled and quartered
1 medium green pepper, trimmed and cut lengthwise into 1'' strips
1 medium tomato, thinly sliced
Recepies of sweet pumpink salad
Ingredients:
- 1 kg of pumpkin
- 3 tsp.C cinnamon
- 5 tsp.S honey
- A pinch of salt
- Some sesame seeds for decoration
- A little oil
presverd lemon
- the water has to be boiled
- put your lemon in the boiled water for 2 minutes
- after clean it well
- open with knife as i have shown you during cooking class & stuff it with salt
- put it in the glass jar & seal it well ( don' t put the jar in refrigerator )
- leave it 15 days ( time to time it's good to shake the jar )
- after you can start using it & you can keep it for as long as you like
- enjoy it .
