Usually boats will start by 12-1 PM . also it depends on other co passengers. Boat management may call you or you can also call them and let them know your ETA of arrival. It's better if you there by 12 PM.
I don't think that they can drop you at 7am, but it is possible if you go by yourself.
How it works is, they will pick you up and depart from one place, sail for sometime and stop at one village for night stay so in the morning you can take an auto from the village to the place where your car is parked or if you go by taxi, you can tell taxi driver to pick you from that village. The distance from the place where you departed and where you stay will not be more than 20kms (it is the case for me). They dropped me around 8am at the departed place. But you have to miss the morning sunrise and delicious kerala style breakfast and also sailing from the village to the drop point.
I suggest you to reach the point before one hour and get the details of the place where they will stay for the night, distance from that point to the night stay point (by road) and arrange some kind of transportation, you can ask them if they can provide the transportation from the village to your car.
