No employee should handle ready to eat food without gloves and if they handle anything without gloves they must wash their hands before putting on new gloves. This does not pertain to those handling food with tongs or other food handling utensils.
I assume from your question that you observed this in my restaurant. If so, I apologize profusely. I provide endless boxes of latex gloves in all workstations and find it hard to believe, after our monthly staff meetings, that any of my food handlers are not wearing gloves when handling food. If you would be so kind as to tell me what food area you observed this practice, I can promise you that I will address it in the morning. I eat at my restaurant every night and I try to be vigilant in proper treatment of all of my product However, there are times and situations where employees do the wrong thing and I can't fix it unless I know about it. So I want to thank you for alerting me to this situation. I have been in business for over 23 years and work very hard to provide a great product. I don't need an inattentive employee to cause problems. Again, thank you for this information.
